TWICE BAKED POTATOES WITH A KICK
6 Large baking potatoes 3 Tablespoons olive oil 3/4 Cup sour cream 1 Red bell pepper, diced 2 Cups frozen corn or 2 cans, drained 2 4 ounce cans of diced green chile peppers, drained 1 1/2 Cups shredded pepperjack cheese
1-Preheat oven to 400 degrees 2-Pierce each potato with a fork in a few places 3-Rub each spud with olive oil and bake for 45-55 minutes. 4-In a medium bowl combine sour cream, cheese, corn, bell pepper and chiles. 5-When potatoes are cooked, cut in half lengthwise and scoop out the flesh leaving about a quarter to a half inch of shell. 6-Mix the potato flesh with the cheese mixture and scoop back into the potato shells. 7-Bake for 15 minutes, or until the cheese is melted and golden brown.
