Broccoli Salad

 

 

4 slices bacon

1 head of broccoli, stem removed and cut into small florets

1- 6oz. package of feta cheese, crumbled

1 small red onion, chopped

1 cup frozen peas

2 Tbs. red wine vinegar

1 Tbs. sugar

½ tsp. salt

1 tsp. ground black pepper

½ cup mayonnaise

½ tsp. lemon juice

 

Cook bacon until done.  When cooled, crumble.

In a large bowl, combine broccoli, peas, cheese, bacon and onion.

In a small bowl, whisk together mayo, red wine vinegar, salt, pepper, sugar and lemon juice.

Combine dressing with salad and serve.

 

Note: Lots of other ingredients work with this type of salad like cauliflower, shredded cabbage or pickled beets.  Be creative!!
